Quick and Easy Tofu Scramble
Whip up a flavorful tofu scramble in minutes! Crumbled tofu sautéed with your favorite veggies and spices creates a hearty, protein-packed dish that's perfect for any meal of the day. Quick, simple, and deliciously satisfying!
14 ounces soft tofu, drained and patted dry
1½ teaspoons vegetable oil
1 small red bell pepper, stemmed, seeded, and chopped fine
1 shallot, minced
½ teaspoon table salt
⅛ teaspoon ground turmeric
⅛ teaspoon pepper
2 tablespoons finely chopped fresh basil
Crumble tofu and spread on paper towel-lined baking sheet and let drain for 20 minutes, then gently press dry with paper towels. Heat oil in 10-inch nonstick skillet over medium heat until shimmering. Add bell pepper and shallot and cook until softened, about 5 minutes.
Stir in tofu, salt, turmeric, and pepper and cook until tofu is hot, about 2 minutes. Off heat, stir in basil and serve.
*NOTES* You must use SOFT tofu. It can be harder to find but the texture will not work with firm tofu... trust me i tried it. I was like I can make this work... nope. USE SOFT TOFU you will be so happy you did!
