Mushroom Tartlets

Mushroom Tartlets are a great people party pleaser! Mushrooms, onions and vegan cheese come together in a nice crispy puffy crust. Whether its a family gathering or a big party, these tartlets are sure to please!
Ingredients
4 ounces vegan cream cheese
3 tablespoons vegan butter, divided
¾ cup plus 1 teaspoon all-purpose flour
8 ounces fresh mushrooms coarsely chopped
½ cup chopped green onions
1 flegg aka flax egg (1 tablespoon ground flaxseed and 3 tablespoons of water)
¼ teaspoon dried thyme leaves
½ cup shredded Follow Your Heart parmesan cheese
Instructions
1. Place cream cheese and 2 tablespoons butter in a mixer bowl. Attach bowl and flat beater to mixer. Turn to medium speed and beat for about 1 minute. Stop and scrape the bowl.
2. Add ¾ cup flour. Turn to low speed and mix about 1 minute, or until well blended.
3. Form mixture into a ball. Wrap in waxed paper and chill for an hour.
4. Divide chilled dough into 24 pieces. Press each piece into a miniature muffin cup (greased, if desired).
5. Meanwhile, melt the remaining 1 tablespoon butter in a large skillet over medium heat. Add mushrooms and onions. Cook and stir until tender. Remove from heat. Cool slightly.
6. In a medium bowl, mix flegg, 1 teaspoon flour, and thyme. Stir in parmesan cheese and cooled mushroom mixture. Spoon into pastry-lined muffin cups.
7. Bake at 375˚F for 15 to 20 minutes, or until golden brown. Serve warm.
