Easy Red Lentil Daal

Red Lentil Daal is a hearty and aromatic Indian dish made primarily from red lentils simmered with spices, tomatoes, and onions. This creamy and flavorful stew is often served with rice or flatbreads and is a staple in many Indian households.
Ingredients
1 teaspoon olive oil
2 onions
3 garlic cloves
1 tablespoon fresh ginger
1/2 teaspoon dried red pepper flakes
2 teaspoons ground turmeric
3 teaspoons garam masala
1 cup dried red lentils
1 can chopped tomatoes
1 can coconut milk
2 cups of vegetable broth
1 tablespoon of lemon juice
2 handfuls of fresh spinach
Instructions
Heat the oil in a large pan over a medium heat. add onion and cook gently for 5 minutes. add garlic ginger and red chili flakes and cook a few minutes.
add to the pan the turmeric and garam marsala and cook 1 minute
add the lentils tomatoes with their juice coconut milk and broth then srit to combine. season with salt and pepper and cook on a medium/low heat for q5-20 minutes until reduced and thick. If you have time leave it on low a little longer for more flavor. Remembering to stir often
Stir in the lemon juice and spinach until it wilts
serve over basmati rice
