Pumpkin Chocolate Chip Muffins

4 Tablespoons of Flax Seed Meal
12 Tablespoons of Water
1 1/2 Cups Sugar
1 Can of Pumpkin Purée
1 1/2 Cups Vegetable oil
3 cups of Flour
2 Teaspoons Cinnamon
1/2 Teaspoons Nutmeg
2 Teaspoons Baking Soda
1 Teaspoon Salt
1 Bag of Chocolate Chips
Preheat Oven to 375 degrees.
Spray 2 muffin pan with coconut oil.
In a large bowl, whisk the flax seed and water. Add sugar, pumpkin and whisk thoroughly.
Add in remaining dry ingredients and mix until smooth.
Fold an entire bag of chocolate chips.
Place batter evenly in muffin pan.
Bake 20-25 minutes until a toothpick inserted comes out clean.
