Acorn Squash

Acorn squash is so good and good for you! It's especially high in Vitamin C and an excellent source of B vitamins. It has an acorn-like shape with ridged skin that can vary in color from dark green to white. Acorn squash has sweet, yellow-orange flesh that has a slightly nutty flavor.
That's great and all but how do I make it taste good? How do I make something my family will like? We have you covered!

Ingredients

1 medium acorn squash, halved and seeded

1 tablespoon of vegan butter

2 tablespoons of brown sugar

Instructions

1. Preheat oven to 350˚ F (175˚ C)

2. Turn acorn squash upside down onto a cookie sheet. Bake at 350 degrees until it begins to soften about 30-45 minutes.

3. Remove squash from the oven and put it on a plate so that the flesh is facing up. Place butter and brown sugar into the squash and place the remaining squash over the other piece. Place squash in a baking dish to prevent sliding while baking.

4. Place squash in the 350˚ F oven and bake for another 30 minutes.
