Plant-based waffles are easier than you think. Here’s a recipe that’s quick and easy.

Ingredients

Dry:

  • 2 cups flour

  • ¼ teaspoon salt

  • 4 teaspoons baking powder

  • 2 tablespoons sugar

Wet:

  • 2 tablespoons golden flaxseed meal

  • 6 tablespoons water

  • 1 ½ cups warm unsweetened almond milk

  • ⅓ cup vegan butter

  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, mix together flour, salt, baking powder and sugar, set aside. Preheat waffle iron to desired temperature.

  2. In a medium bowl, combine flaxseed and water. Stir in the warm almond milk, vegan butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended into a smooth batter.

  3. Ladle the batter into the preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately with assorted berries, bananas and maple syrup.

For decadent chocolate waffles, add ¼ cup of cocoa powder to the dry ingredients.
